Get 1/3 cup flour (whole wheat), 1 ½ tablespoons olive oil, ¾ cup chicken broth (low sodium variety), 1/3 cup sun-dried tomatoes, which are finely chopped or sliced thin, ½ teaspoon chopped rosemary, 1 or 2 tablespoons chopped flat-leaf parsley, 10 ounces sliced white button or baby bella mushrooms, and 2 teaspoons unsalted butter.
Pound chicken cutlets, which sit between 2 plastic wrap pieces, until they’re about 1/3 inch thick. Then sprinkle with a bit of salt and pepper. While heating the oil in a large skillet, put the whole wheat flour on a plate. Fully coat the chicken with flour. Fry chicken until fully cooked and golden (approximately 4 minutes per side). Add ½ cup chicken broth, sun-dried tomatoes, and rosemary to chicken drippings in the skillet; then cook about 5 minutes. Add 1/3 cup marsala wine, bringing the mixture to a boil. Add remaining broth and the butter, simmering about 30 seconds. Spoon the mushroom sauce mixture over your cooked chicken, sprinkle with parsley and serve.
